I'm looking at getting a full decat. I know 3" would be better than 2.5 but is a bit harder to get hold of and bit more expensive I've found. Would 2.5 do? I'm planning on a remap. Also if I remap and it comes to MOT time can I safely swap a cat in and drive to garage?

Yes - You can just fit the cat in for MOT time and back out again as soon as it's over (Read - Muggins here will just end up swapping the CAT for you).

2.5" will be okay but 3" would be even better - Just use your H&S trade account - you know you want too - then just get our engineering company to copy the H&S full kit and sell the copies £££££££££££££££££ - I will make a downpipe & centre section fit mine (Anybody Else).
And you must also change the back box.

As for remap - only use the best (And Trusted):

Why don't you organise getting Duncan in for a remap weekend seeing as we have quite a bit of space in Unit 4 & 5 - You might even get your map cheaper.

Be very careful just banging on a 3" system on with this car, they are prone to boost spikes of up to 1.5 bar and also boost creep....not very good for your engine.

if you do go 3", add a remap and a 3 port boost control solenoid (also panel filter and a walbro 255lph fuel pump) you will have a cracking motor.
